Marble Banana Cake

This Banana Marble Cake is designed for those people who can’t make up their minds. Lets see do you want Chocolate or yellow cake? Why not have both?

Do you have extra bananas sitting around the house going black? Not really black, but black enough to where you wouldn’t want to eat them but wouldn’t mind putting them in some muffins or bread?

If the answer is yes to any of the above questions, then this cake is the recipe for you. If you are not sure if you crave a yellow or chocolate, or just want both you will love this cake. It is perfect with a cup of coffee in the afternoon or dessert. Heck guess what I ate this morning for breakfast? You guessed it and it was perfect. The only problem is, I only had one piece because the rest of it was gone. The family ate it all.

So, enjoy it like I did. I just hope you get more than just one piece.

Marbled Banana Cake

Ingredients:

6 tablespoons butter
1 cup sugar
2 medium bananas mashed
1 1/2 teaspoons vanilla extract
4 large eggs
3/4 cup buttermilk
1/2 teaspoon salt
1/2 teaspoon baking soda
1 1/2 cups all purpose flour
1/4 cup unsweetened cocoa

Directions:

Heat your oven to 350 degrees.

Place the butter in a large bowl and microwave for one minute on high. Add sugar and stir with a whisk. Add banana, vanilla and eggs stir well. Stir in buttermilk, salt and baking soda. Add flour and stir just until blended. Remove half the batter to another bowl. Add cocoa to the remaining batter. Add a tablespoon of batter to the middle of the pan, stacking on top of each other, alternating white and black batter. Continue until no more batter remains. Bake for 20-25 minutes or until a toothpick inserted in the middle of the cake comes out clean.
