mango kulfi,finally the mango season came and this year i had a chance to try new recipes with mangoes and here comes easy mango kulfi recipe which can be made in minutes.But you have to wait till it sets overnight and then relish it.Reduce or increase the sugar quantity according to your type of mango used in the recipe.I always wanted to use less sugar as i want the original taste of ingredients added in the recipe.

I think its a week i did not blogged due to network problem and also the season is so hot.I think i had a break for past few days,so i came back with a refreshing pure summer recipe with mango and prepared some popsicles recipe too.stay tuned for more recipes here.Lets move on making the recipe.,

frozen dessert recipe using mango,almonds and pistachios


Ingredients

  • mango pulp - 1 cup
  • milk - 1 cup
  • almonds and pistachios - 1 cup soaked in warm water for 30 minutes
  • cardamom powder - 1 teaspoon
  • rose water - 2 drops
  • milk powder - 2 teaspoon (optional)
  • fresh cream - 1 teaspoon
  • saffron strands - as needed
  • Sugar - 3 tablespoons
Instructions
  1. In a blender,take the milk powder along with soaked almonds and pistachios and a few drops of milk along with saffron strands.
  2. Grind it to fine paste and add little more milk if required.

  3. In a sauce pan,boil the milk and sugar.Then add the paste and cook it in low flame without making it more solid.
  4. Finally add fresh cream and cook it for few seconds in low flame and switch off the flame.

  5. Transfer it to a bowl and freeze it till it becomes creamy and soft.
  6. Then take the mango pulp in the blender along with the kulfi mixture prepared and blend it to a creamy texture and then pour the creamy mixture in kulfi moulds or in popsicles moulds.

  7. Freeze it overnight or atleast for 5 hours.After that remove the moulds from freezer and demould it carefully by placing the moulds in warm water or show it in tap water.
  8. Serve immediately.
