This is my first completed home bakers challenge :) I got to know about this wonderful group through Pavani's blog and as I am always interested to know the art of baking and improve my baking skills I immediately sent a request to Priya and I became a part of this group. This month's challenge was hosted by Sangee and she chose a wonderful cake with outstanding flavors-Mango and chocolate.Now who does not love mango and chocolate and I needed no push to try it out immedietly. So sweet of Sangee that she provided two versions of the cake,eggless and one using eggs. It was so easy for me to try the eggless version,with out breaking my head for egg substitutes :).
Challenge:
We were supposed to bake a cake combine mango and chocolate flavored batter.It could either be a loaf,checker board cake or marble pattern.For the mango flavored batter we had the chice of using store bought pulp or fresh mango pulp.
What I did:
I chose the egg less version,used fresh mango pulp and halved the recipe exactly as I have only a small baking pan and chose to go with a two layered marbe pattern cake.
Recipe:
Ingredients:
1 cup all purpose flour/maida
1 teaspoon baking powder
1/2 cup sugar
1/2 cup mango pulp (I used one banganapalli mango)
1/8 cup milk
1/8 cup cocoa powder
1/4 vanilla bean scrapped
1/8 cup curd
3 tablespoon oil( I used sunflower oil)
A pinch of salt
Method:
1. In a large mixing bowl,mix all the wet ingredients along with sugar an cream well.In another bowl sift all the dry ingredients except cocoa and set aside.
2.Add the dry ingredients to wet one's and slowly incorpoarate. Start whisking into batter until ribbon consistency. This is the basic mango flavored batter
3.Mix cocoa powder with milk,add half of the cake batter and choclate flavored batter is ready.
4.Preheat oven at 176C for ten minutes.In a greased cake tin,first pour the mango flavored batter.spread evenly,next pour the chocolate flavored batter.Using a knife create swirls for marble effect.Bake for 30 to 40 minutes.Cool in a wire rack.
Time:50 minutes(preperation and baking)
Yield:10 wedges
