Mango and Coconut Tart That Looks Like a Mango and Coconut Cheesecake

Accidents happen.Very frequently, in my house.

But the results are never so pretty. I was looking for my muffin trays to make cookie tart shells for a low calorie mango tart. But unfortunately, the daily help had stuffed them where I could see them not. Maybe she never wanted me to bake muffins for the longest time. I seemed to have no choice...the stuff was out of the fridge and tongues were a wagging...and waiting for a low cal mango tart.
Mango and Coconut Tart that looks like a Mango and Coconut CheesecakeThe only problem we faced was in the naming of this piquant dessert.  So Mango Tart that looks like a Mango Cheesecake. FYI ,this summer ,my project is to loose At least 15 kgs or 35 pounds of the fat that I have added to my frame thanks to my baketitude. Its not easy for a foodie like  me to give up food ,so we look for alternatives. I tried Herbalife last year and spent a large amount of money but unfortunately, the excess protein added to my woes and left me 6 kg heavier. Moral of the story, there are no short cuts in life and the best way to loose weight is good old fashioned exercise. To get back to my sweet tooth...This mango curd was a spin off from the classic lemon curd recipe that uses almost 200 gms of butter and 8 egg yolks and a cup of sugar to make the same amount of manna from heaven .
Mango and Coconut Tart that looks like a Mango and Coconut CheesecakeMango Puree took care of the sugar ,so there is just two tablespoons added sugar. Coconut milk made up for the butter and fat and the consistency, I adjusted with a roux made with a tablespoon of butter.Less than half the calories. A traditional pie crust was replaced with a cookie crust. Less butter ,but then again you control how much you eat. I say- have a bite...and then gorge on the mango curd.
For the

you need
1 cup mango puree (when in Mum use alphonso)200 mls Coconut milk-I used Dabur2 tbsp sugar2 egg yolks1 tbsp butter2 tbsp plain flour1 tsp gelatin Just to be sure
Pie crust 
you need
200 gms digestive biscuits(I like the Unibic Oats digestive biscuits)70 gms butter2 tsp sugar - optional
Pop the biscuits into your food processor and pulverize them yo a powder with the sugar ,if you are using it.
Mango and Coconut Tart that looks like a Mango and Coconut CheesecakeMelt the butter in the microwave and pour it in. You may reduce the amount of butter too...or add some more biscuits.
Mango and Coconut Tart that looks like a Mango and Coconut CheesecakeProcess. Press into tart moulds with removable bases... or into lined muffin trays. I used 2 tart moulds and a 6 inch springform tin.
Mango and Coconut Tart that looks like a Mango and Coconut CheesecakeHeat your oven to 350°F or 175°C and bake the base for 8 to 10 minutes.  This gives an amazing aroma ...re baking cookies.In the meanwhile heat the butter and flour in a pan and lightly cook the roux till the raw smell of flour goes.

If you intend on making the tart dressy and like a cheesecake , sprinkle the gelatin over the mango mix. Wait for it to swell and whisk it in.Add in the egg yolks and whisk well.Check the taste...Mango and Coconut Tart that looks like a Mango and Coconut Cheesecake
Pour over the baked cookie base and pop into the oven.
Mango and Coconut Tart that looks like a Mango and Coconut CheesecakeSince I had forgotten to take the base out of the oven after 10 minutes, my bases were well done.I turned on the heat from the top and reduced the temperature to 150°C °F and baked the tarts till the mango curd stopped wobbling like a cheesecake. Mine took about 25 minutes.I turned the oven off at this stage and just opened the door a wee bit.
I left the tart in the oven to cool and then popped into the fridge after covering with foil.We had the small one ,the big one was for friends. The curd jiggled happily but held it's own. Sort of when you have had a drink too many but can stand a few more...The tart tasted just that .Tart.
Mango and Coconut Tart that looks like a Mango and Coconut CheesecakeAnd mango-ey and rich and buttery.My only complaint with the Dabur Coconut milk is that it doesn't taste like coconut.  So we never smelt nor tasted the coconut. The base was story of forbidden pleasure on its own.
Mango and Coconut Tart that looks like a Mango and Coconut CheesecakeAfter that butter laden ,sugary sweet lemon tart at Leopold Cafe, this was a blessing.  At least I could eat a whole slice without going into a guilt trip. Maybe next time I'll add a meringue, but the mango slices were pretty good too.

Thinking of the vitamins and fiber made my heart go boommmm....and my newly found muscles cry with relief.
