Today is the fourth installment of Blogger C.L.U.E. Society where we are given another person’s blog and a word that our recipe should be associated with. This month I got my dear friend Stacy’s blog Food Lust People Love. I have been fascinated by the lunch lady, Madame Wong, who Stacy spoke so admiringly of in her original post about pizza rolls. This fit right in with our word for February “RED”.

Before I start with that, I want to remind everyone of my daughter and my venture at Yum Goggle. I met Stacy some time ago and have been following her blog for several years. Stacy, who is about my age, lives in Dubai and has live in other exotic places even in childhood. Do to her father and then her husband’s work. Stacy travels to the U.S. to visit her daughters on the east coast or her mom and other family in the Texas/Louisiana area like I travel up to the grocery store! I have no idea how she packs then jumps on a plane in no time at all then keeps cooking, photographing, and blogging like she hasn’t just spent 18 hours on a flight. I love her mom and I know she reads this blog so here’s crossing my fingers that I get to meet them both somewhere across the Texas border sometime this summer when Stacy makes her annual trip home.

You can find Stacy’s original post here where she talks about enrolling her and her husband enrolling their daughters at International School of Kuala Lumpur where Madam Wong was the lunch lady – who has a lunch lady that looks like her? You can see her picture on Stacy’s blog. None of mine ever wore a chef’s hat – they all had those hairnet things on then little paper “ice cream parlor” hats. I bet they ate well at school……I know these pizza rolls are delicious and if those had been on my high school lunch menu, I would have been eating at school a lot more often!

I made the recipe mostly following Stacy’s recipe – and please, go over and check her blog out because I made recipes of hers all the time. She is the queen of muffin making as well as some fabulous Louisiana based recipes that are lip-smackin’ good! She also add both American and International measurements for every recipe which is so nice.

This is how I did it:

2 Cups of bread flour plus more – I used bread flour but the “more” I used semolina flour because we like that kind of pizza texture like Pizza Hut.
1 Packet of Yeast
1 Tablespoon of sugar
½ teaspoon of sea salt
1 1/3 Cups water about 105F.

Directions for dough:

Make a well with the flour; add the yeast, sugar, salt, and half of the water.
Using a fork start mixing and grab flour with the fork until you have a paste then add the rest of the water and gradually stir in the rest of the original flour that you made the “well” with.
Take the dough out and knead it for a few minutes until you have elastic dough.
Sprinkle top with flour, put back in the bowl, cover with plastic wrap and allow to rise for about ½ an hour in a warm place.
Punch it down, bring it out and using the extra flour coat the rolling pin to roll out to 17×13 rectangle.

Now for the pizza part:

1 ½ – 2 Cups of Pizza sauce – I used Contadina in the squeeze bottle and it worked perfectly!
1 ball of mozzarella cheese, sliced – I shredded mine and used 2 cups worth.
Pepperoni – I used one package of Oscar Mayer.
Dried Oregano (optional)

Directions:

After dough is rolled out, spread about 3/4th of it out and round all the way to the edges.
Put on the cheese and then the pepperoni both to your liking.
Gently and without squeezing, rolls up using the short side for fewer but larger rolls and the long side for smaller and more rolls.
Once rolled up, use a bread knife to place in a parchment laid or non-stick sprayed pan. I used iron skillets.
Top with the rest of the pizza sauce, some shredded cheese, and the optional oregano.
Again, cover with plastic wrap and place in a warm place for 30 minutes.
After 15 minutes, turn on the oven to 350F.

Take the plastic wrap off after 30 minutes and place in the oven. Stacy baked hers for 20 minutes but mine took 35 minutes so to be golden brown and baked enough that Mr. Picky Eater would eat it!

They were outstanding! There were 2 left and my daughter snatched them up early the next morning so she could be the one eating them for lunch that day. It was given the seal of approval by everyone in the house only next time I have been asked to double the batch so everyone can enjoy them the next day at lunch……as Top Girl laughs.
