Layered sweet pedas(diamond cuts)The layered sweet biscuits recipe I am blogging today adds a new dimension to an old favorite-sweet maida biscuits/diamond cuts more commonly known as mawa peda in our household.These pedas remain a favorite for most,one can easily forget the quantity and go on and on while munching this.Totally addictive and while I prepared it in a different way with some sweet stuffing inside,it only added to the taste and it was even more good.The whole batch was gone in no time.The process may look complicated,but take a close look at pictures and trust me once you start preparing its a breeze and you will be glad you tried.A very easy recipe with day to day ingredients.Try out and lemme know :)
Layered sweet pedas recipe
Star ingredients:Maida(all purpose flour),rice flour and almonds
Time:40 minutes
Yield:30-40
Layered sweet pedas(diamond cuts)
Ingredients:
1 1/4 cup all purpose flour
1/4 cup rice flour
1/2 cup sugar
1/2 cup ground almond with skin
2 cloves,cardamom
3 tablespoons+1 tablespoon ghee
A pinch of salt
Oil for deep frying
Method:
1.Powder almonds along with cardamom,cloves and sugar and keep aside.Mix rice flour and 3 tablespoons ghee with almond powder and make a paste.
Layered sweet pedas(diamond cuts)2.Make a stiff dough with maida,salt and 1 tablespoon ghee.Add as little water as needed.
Layered sweet pedas(diamond cuts)3.Make 4 equal sized balls from the dough.Roll one ball into a circle as thin as possible over the loured surface.
4.Apply the almond paste over the lower half as seen in the picture.Close with the upper half and seal the edges.
Layered sweet pedas(diamond cuts)5.Now roll the stuffed roti as tightly as possible (refer pic).Heat oil for deep frying.
6.Cut out small rolls resembling roses.
Layered sweet pedas(diamond cuts)7.Deep fry till golden from both sides.Remove to a tissue and store airtight.

1.Apply a thin film of filling,too much of filling may turn the pedas soggy.
2.Roll the dough into thin circles so that the pedas remain crispy
3.You can use pistachios along with almond or you can avoid nuts and use only rice flour too.
