Super Excited.So excited on leaving Jalandhar and getting on to Maximum City, that I got on the wrong f^*/@^$ train.
Two Shatabdi trains connect Jalandhar with Delhi each day. One leaves Jalandhar at 6:03 am and the other at 6 :02 pm.
When hubby dear got my tickets done for my final exit from sleepy city ,all I saw was 27th, E2 ,the seat numbers and 6:02 .
On the 27th morning, I was up and ready and boarded the train at 6:02 am and plonked on my seat with the intention to update my FB status.
A gentleman was politely hemming and hawing that I leave his seat. Giving him weird ,get lost looks I arrogantly told him that 17 and 18 are my seats.

Poor man...he got scared for a mo and picked out his tickets to check if he was on the wrong train. And then I checked... I was supposed to be on the evening train. So he tried to suggest that I get off at Phagwara station and take the evening train after returning to Jalandhar which is a good 30 kms away.
As if!
So I carried on to his surprise, paying double my fare as penalty.
Cool...
And giggling away to glory when calls started coming in on reading my FB status...
My train journeys are always epic and exciting...remind me to narrate sweet child's first train journey...when we almost missed the train .
Such a long intro deserves the best cookies.
These are the best.
And I made them with KitchenAidInd Stand Mixer.
They are simple...and wholesome.
Worth the 5 odd minutes it takes to make them.

you need

2 1/2 cups rolled oats we used Quakers
2 cups all purpose flour or maida
1 1/2 cups sugar
1 tsp salt
4 tsp vanilla essence or extract
2 cups chocolate chips or chocolate chunks
2 eggs
1 cup neutral vegetable oil (remove 2 tbsp)
Handful chopped walnuts - optional

Plonk it all into the stand mixer with the dough need attachment. I added one cup oil the first time ,subsequently, I reduced the oil by a tbsp each time. Works fine.
if you feel the dough is too fry and not coming together , add a wee bit of egg white.

Bring all the ingredients together. Barely took a minute. We were on excitement overdrive so...
Once done , use an ice cream scoop and scoop out equal quantities.
Just tighten the cookie ball in your fist and place on foil Or a cookie sheet.
Oven pre heated to 350°F or 170°C.

Each cookie sheet will take 15 minutes to 17 minutes.
Cool them on a wire rack and store in an airtight container.

Enjoy with your daily cup of java or just otherwise.
These are yum. You can substitute the plain flour for whole wheat flour too...
