khubani ka meetha - the name itself tells how sweet the dessert is.Meetha means sweet and khubani means apricot.The apricot is cooked in sugar syrup for few minutes and served with cream or custard.This is originated from Hyderabadi cuisine and this is nearly equal to a compote you can say.I saw this recipe a year back from my friend's blog who posted on behalf of SNC challenge and i bookmarked it and postponed the recipe to give a try.I adapted the recipe from here.

Just bookmarked it and i did not saw the recipe fully and last sunday went for grocery shopping.There i saw the packet full of dried apricots and i immediately pick that one and yesterday made this for hubby.I really excited to see the recipe is super easy one and made within minutes.I recommend the recipe to all of you to give a try and this is my first try and it came out so good.we have to be careful in cooking the apricots in water,it cooks little slow and consumes more water.So if the water is reducing while cooking ,add more water.For fast cooking as usual,cover the vessel with the lid and cook it in medium to low flame.The recipe lasts for weeks if stored properly in refrigerator.

This is the first time i ate apricot and it tastes more similar to dates and didnt try the fresh ones.I bought the apricots which are dried ones and pitted ones.If you are using fresh ones,then use the seeds inside which resembles more like almonds and those also used in the recipe by finely chopped them.I made the thick basundi and served along with this one.soak them overnight with enough,just make sure all are immersed - just immersing level of water is enough for it.The next day it swells and super soft spongy in texture.Drain the water and proceed the recipe.lets move on making the recipe.,

compote recipe using dried apricots


Ingredients

  • dried apricots - 1 cup soaked overnight in water
  • sugar - as needed
  • saffron - as needed(optional)
  • water - as needed
  • Almonds - for garnishing
Instructions
  1. Take the soaked apricots and add it to the boiling water in a kadai and reduce the flame to medium.

  2. Separately boil the water in a vessel and keep it ready if you want more water.If you want water,then add the boiling water,do not add cold water otherwise it will stop cooking for few minutes.
  3. You can add the apricots by dicing it two as i made it or chop into small pieces and add it.the cooking of apricots will take approximately 25 minutes.
  4. Once the apricots get cooked,add sugar and saffron to it and mixing it without taking hands.

  5. Meanwhile mash the cooked apricots using spatula or fork.Mixing it continuously till it becomes thick like halwa.
  6. Switch off the flame and wait till it came to room temperature.
  7. Take a serving dish or shot glass,first add your cream or basundi or any milk based custard.Then top it with the spoonful of apricot we prepared and finally with sliced almonds.
  8. Serve chilled.
