Kani Salad Recipe

Good morning darlings :)  I'm sharing with you another simple recipe today.  I first tried this salad back when I was working in Makati.  It was served for lunch at the boss' Japanese restaurant.  I fell in love with the taste that I tried to recreate it many times at home.  I love the combination of flavors with the sweetness of mangoes, the creaminess of Japanese mayo, and the flavor of the sea with the crab sticks.It is so easy to make yet super delicious and will be highly appreciated by anyone who loves salads and Japanese cuisine. Kani Salad Recipe 
For this recipe, we will need the following ingredients:
1.  Lettuce
2.  Crab sticks/imitation crab meat
3.  Carrots
4.  Mangoes
5.  Cucumber
6.  Japanese mayoKani Salad RecipeFirst, get the crab sticks.  Remove from plastic wrapper.  In a pot, put about an inch or so of water and bring into rapid boil.  Place a steamer above the water and put the crab sticks.  Steam for about 5 to minutes until cooked.  Once cooked, let the crab sticks cool down and set aside.Kani Salad RecipeNext, peel the cucumbers and the carrots.  Cut the cucumbers in lengthwise then deseed using a spoon.  Cut into one-inch sticks.  Get the carrots then thinly slice and cut the same size as the cucumbers.Kani Salad RecipeWe will need ripe but firm mangoes for this recipe.  I used only one mango for this but you can add as many or as little as you want.  Wash the mangoes, remove the seed by cutting two faces of the mango then scoop out the meat using a large spoon.  Slice the mango as shown below.Kani Salad RecipeNow that the crab sticks have cooled down, shred it using your fingers.  This can easily be done as the crab sticks can be rolled then pulled apart into thin strips.Kani Salad RecipeNext, wash then tear up your lettuce then mix it together with all the ingredients in a large bowl.  I love that it looks so colorful :)Kani Salad RecipeYou can now add the Japanese mayo.  I love using Japanese mayo for this dish as it has a richer flavor than the regular mayo.  It is also creamier and "eggier" than the usual.Kani Salad RecipeNow all you have to do is chill this in the fridge or serve it immediately in an ice bath :) Delicious!  You can also top this with tobiko.Kani Salad RecipeHope you enjoyed today's recipe!
