Kadai bhendi/bhindiThis kadai bhindi is an interesting twist to our regular kadai vegetables or kadai paneer.Bhendi means okra (vendakai). Are you one among those who dread about okra slime?Try this and you will become an okra lover immediately.I saw this recipe here and modified to my convenience and taste.I tried it last week and absolutely loved it.It was such a perfect combo for the peas baby corn pulao I made and we enjoyed it thoroughly.Try this easy and tasty recipe and I am sure you will be in all praises :)
Kadai bhendi recipe
Star ingredients:Okra/bhendi
Time:40 minutes
Serves:3
Kadai bhendi/bhindi
Ingredients:
20-25 tender ladies finger
2 small or 1 large onion chopped fine
2 tomatoes chopped fine
1/2 green bell pepper cubed
1/2 red bell pepper cubed
2 teaspoons coriander powder
1 teaspoon chilli powder
1/2 teaspoon turmeric powder
1 teaspoon garam masala
2 green chillies slit
1 teaspoon ginger(crushed or paste)
1 teaspoon cumin seeds
Crushed kasuri methi
Salt
3 tablespoons oil
Method:
1.Wash and pat dry okra thoroughly.Cut into small pieces.Heat a shallow frying pan and add 1 1/2 tablespoons oil.Shallow fry theokra and remove to a tissue paper.
Kadai bhendi/bhindi2.In the same kadai,add the remaining oil and temper with cumin seeds.Add the sliced onions and fry till translucent.
Kadai bhendi/bhindi3.Add the chopped tomatoes,bell peppers,all the spice powders,salt and saute really well.The mixture should be well cooked and oil should separate.
4.Add the fried okra and mix gently.Add the crushed kasuri methi and serve hot.
Kadai bhendi/bhindiNotes:
1.You can even deep fry the okras but I shallow fried them and it was perfect
2.It is important to saute the veggies very well before adding the okra.
3.I made it more like a stir fry as we like it this way.If you need a semi dry dish add 2 more tomatoes to the gravy.
