I love jalapeno poppers, but they’re a total calorie bomb.
I wanted to find a way to get my fix without the fat. Jalapeno popper grilled cheeses have been popping up everywhere, and it made me want to put my own spin on the sammie. On average one jalapeno popper is 70 calories… and really, who eats just one? Not to mention, they’re a freaking appetizer. My jalapeno quesadilla is an entire meal (not just an appetizer), and it clocks in at under 300 calories… werq! Here’s how to get your popper fix in a healthier way.
All you need is a wrap, two laughing cow wedges, and a jalapeno. I prefer spinach wraps or whole wheat wraps, and light creamy swiss wedges.
Cut the jalapeno in half, and seed it. You only need half, so put the one half back in the fridge. Flash fry the jalapeno half in a little bit of extra virgin olive oil. Remove the jalapeno from the stove when it begins to brown, and wrap it in a paper towel to soak up any excess oil. When the jalap cools down, dice it up.
Spread the laughing cow smoothly over half of the wrap. Add the japapeno, and use knife to shmear it around. If you want, you can add the crumbs of a cracker… this will add about 14 calories, but give you the crunchiness of a real popper.
Fold the wrap over, and cook it on med/low heat until both sides get a little crispy.
