Yep, you can make chocolate cake in the microwave. I'm not someone who eats a lot of dessert. I make a lot of it, but I generally don't eat a lot of it. (Unless there's dark chocolate involved, in which case, back off, it's mine). But, when I get a craving for dessert, I want it NOW, not in an hour. I actually discovered this recipe in the April 2011 issue of Food Network Magazine and I've made it several times since. It's super easy, super fast, and doesn't require many ingredients at all. Really, for microwavable dessert, it's pretty fantastic.
What you'll need:
1/4 cup flour
5 tbsp sugar
2 tbsp cocoa powder
1 egg
3 tbsp milk
3 tbsp vegetable oil
a dash each of salt & vanilla extract
Directions:
Whisk all of the ingredients together into a large microwave-safe mug until smooth. Microwave until puffed, about 2 minutes. Sprinkle with more cocoa powder. (note: The microwaving time could be more, depending on the wattage of your microwave. Just keep an eye on it while it's cooking. It will puff up & the edges will separate from the mug).

At this stage it's good to go for the eating...The cake is warm & chocolatey and gooey, and great just the way it is. But since I always try to do something extra with a recipe if it's not my own, with this cake I just add fun toppings. Whatever you have on hand that you think would go well with it....whipped cream, powdered sugar, or in this case, I used Nutella. I have a big crush on Nutella. Seriously, it's addictive.
