Kerala traditional food

Coconut either chopped or grated, or its milk predominates almost all the dishes of this place. Sadya:
It is a well known traditional cuisine of Kerala. This is a vegetarian meal which is served with boiled rice and a number of other dishes. During special occasions and festivals Sadya is prepared with traditional methods. The best of part of this dish is that banana leaves are used as plates to serve. This provides distinct identity to this cuisine. A typical Sadya is served with Bitter gourd thoran, Lime Pickle, Buttermilk, Paayasam, Aviyal, Kaalan, and Sambar with Boiled rice in the center. It is the perfect cuisine that gives real taste of Kerala at one go. It is among the most sought after dishes due to its delectable taste and varieties.
Kappa Vevichathu
It is other popular cuisine of Kerala because it is inexpensive and is widely available. It is made from Kappa/ Cassava/ Tapioca, which is a staple food of this place just like rice. This can be eaten in breakfast, evening snacks or dinner. Varieties of delectable dishes can be prepared from fresh Kappa among which the most popular one is Kappa kuzhachathu with meen curry. It can be prepared simply and easily served with Ulli chammanthi or Kanthari Mulaku (a kind of chilly) Chammanthi.
Ingredients
- Kappa (Tapioca) – 4
- Turmeric powder – 1 tsp
- Mustard seeds
- Dry red chilies – 3
- Curry Leaves – 2
- Garlic – 1 ½ steam
- Salt
- Oil
- Grated coconut – 1 cup
- Dry red chilies – 4 nos
- Garlic – 4 cloves
- Turmeric powder – ½ tsp
Method
- First using a knife peel the skin of the tapioca. You have to remove both the thin brown color skin and thick pink color skin. Then wash it properly and cut it into medium size pieces.
- Then cook the tapioca pieces by adding enough water, till the water starts to boil. Then drain the water and then again start cooking it by adding fresh water along with 1/2 tsp of turmeric powder and salt till the tapioca becomes soft.Then again drains it using a colander, but this time you have to drain it nicely and keep it aside.
- Meanwhile grind coarsely grated coconut, green chilies, dry red chilies, garlic, shallots, cumin seeds and turmeric powder. Just 3-4 pulses in mixer grinder is enough. No need to add water.
- Then transfer the cooked tapioca pieces to a pan and keep it in a very low flame. This will help in removing any water left in the tapioca pieces even after draining. Then add ground coconut mixture and using the back side of a wooden spoon, mash the tapioca pieces while mixing and remove from the flame.
- Then heat oil in a pan and add mustard seeds. When it crackles, add curry leaves and dry red chilies and pour this to the cooked tapioca.
