Here you go with one of the easiest breakfast/dinner ever.Do you have a bunch of people at home who detest leftover idli.Just try masking those idlis with a flavorful seasoning and there you get an entirely new dish that the same people would love :).Idly upma is such a tasty dish,that it is hard to believe that is made from our own humble idly.Addition of carrots add to the color and nutrition here(can I ever cook something without sneaking veggies :P ). Try this recipes with leftover idlis and you will never ever complain about having left over idlis.
Idli upma recipe
Star ingredients:Idly,onion
Time:10 minutes
Serves:2
Ingredients:
3-4 idlis
1 onion sliced thin
1 carrot peeled and grated
2 green chillies slit
1/4 teaspoon scrapped ginger
1 teaspoon channa dal
1 teaspoon urad dal
1/2 teaspoon mustard
1/2 teaspoon turmeric powder
1/4 teaspoon sugar
1 teaspoon lemon juice
salt
Oil to temper
Method:
1.Crumble the idly with hand.Set aside.
2.Heat a kadai and temper with mustard and urad dal.Add channa dal,green chillies and ginger.Saute well.
3.Add turmeric powder,sugar and saute for 1 minute..Add onions and carrots.Saute well.Now add the crumbled idly and coat well.Add salt and mix well.Saute for 2 minutes and remove from flame.
4.Add lemon juice,mix well and serve.
Notes:
1.Idly contains salt already,so add salt only for the veggies.
2.I did not use curry leaves and cilantro as I did not have it on hand.Use curry leaves while tempering and cilantro for garnishing.
