Pasta is one of my absolute favorite food.But I never liked to order them in hotels because in my experience pasta is hidden by the way too much in the sauce, in other words all I could taste was sauce and not the pasta or herbs.May be many people like it that way but I am not too fond of too much of gravy or sauce in any food.With this said,I read a recipe for pasta salad in one of the issues of Femina or reader's digest few days back.It was a semi dry dish with very little cheese and full of vegetables,just the way i like :)I prepared it my husband liked it very much :)
Ingredients:
1 cup elbow pasta
1 carrot chopped fine
1 green and red capsicum chopped fine
1 potato chopped fine
2 large tomatoes chopped fine
1 onion chopped fine
1/2 chow chow chopped (optional)
1 1/2 tsp olive oil
1/2 tsp died basil,oregano
2 tsp chilli flakes
salt to taste
grated cheese as required
Method:
1. Bring a large pot of water to a boil with salt and add pasta to that and cook till soft and firm (90% done),n the mean while preheat the oven at 232C for ten minutes.
2. In a mixing bowl take the olive oil,basil,oregano,chilli flakes and salt,mix well and add to the chopped vegetables and leave it aside for ten minutes.
3. Roast the vegetables in the oven for 30 to 40 minutes (90% done).
4. In a deep baking dish, arrange the pasta and vegetables in layers add grated cheese and bake for ten minutes in the oven and serve hot or at room temperature.
Notes:
I added very little cheese,it actually tastes great even without cheese.
