Who says a salad needs lettuce? Not the Greeks, that’s for sure. This is one of my favorite salads- I really enjoy all the ingredients: its fresh, salty, acidic, creamy… it has it all. And let’s be real: anything that involves Feta cheese is okay with me. I find myself ordering this salad often when I eat, but it’s very simple to create at home. Here’s how:

What You’ll Need (2 servings):
- 2 large tomatoes, quartered or 2 handfuls of cherry/grape tomatoes, halved
- 1 large red onion
- 1/2 cucumber
- 1 green bell pepper
- 4 oz. of Greek feta cheese, crumbled
- 4 oz Kalamata olives, roughly chopped
- 1 tsp dried Greek oregano
- 1 tsp sea salt & freshly ground pepper to taste
- 2 tbsp EVOO
- 1 tbsp red wine vinegar
Step 1:
Wash and dry the vegetables. Peel off the outer layer of the onion, and chop everything up: Cut whole tomatoes into quarters or halve your cherry tomatoes. Slice 1/2 of a cucumber in half lengthwise, then halve that lengthwise. Continue slicing so that you have 1/2 moon shapes 1/4-1/2″ thick. Slice the pepper into rings, removing the stem and seeds. Also slice the onion into thin rings.
Step 2:
Fold everything together in a large salad bowl. Sprinkle with feta.
Step 3: In a separate bowl, whisk together oregano olive oil and red wine vinegar. Season with sea salt and freshly ground pepper to taste. Lightly dress your salad before serving and enjoy!
