These wonderful gems are flavor missiles. They sure are and they are very addictive. I know that the cook time for these are two hours, but if you are puttering around the house anyway, it is time well spent. I love to munch on these as is, but they are wonderful in a mixed salad, chicken or egg salad.
It is a simple recipe, the honey brings out the flavor of the tomatoes and the slow cooking time intensifies the flavor. It is perfect for that inbetween time when you dont have your homegrown tomatoes and the hothouse variety just don’t have any flavor. You can add a bit of zing to the hothouse by preparing them this way. You will be glad you did.

Ingredients
- 20 cherry or grape tomatoes
- 2 tablespoons honey
- 2 tablespoons olive oil
- 3 sprigs fresh thyme
- 2 teaspoons garlic powder
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
Instructions
- Heat oven to 250 degrees. Arrange tomato halves cut side up on a baking sheet. Whisk together honey oil, thyme, garlic, salt and pepper in a bowl . Drizzle over tomatoes. Bake until tomatoes are half dried 2 hours.
Peace be with you,
Veronica
