homemade dulce de leche - how to make dulce de leche
this is so easy to make rather than making with condensed milk but you have to be very careful in first 20 minutes and then keep on stirring the milk to avoid burning.I used to search the recipe for dulce de leche from scratch but i did not want to make it with store bought condensed milk.I saw the recipe and adapted the recipe from here which is so easy to make and i immediately made this recipe as i already had a pouch of milk in refrigerator.
I always want to make this toffee or dulce de leche from scratch and i made a very little portion when i made the banoffee pie for an event a few years back.But i want to share my thoughts and want to share the easiest way of making the recipe here,so i made this one and refrigerated and i used this for making banoffee pie,i will post the recipe soon.
dulce de leche can be made in several ways like pressure cooker method,microwave method,open pot method,double boiler method.Pressure cooker method is so popular in blogosphere and it is made by filling the pressure cooker with water and place the condensed milk can horizontally.Pressure cook for approximately 30 to 40 minutes and then remove the can.Cool it completely and then remove the lid.Refrigerate and use it.In double boiler method , it is made by placing the pan with condensed milk over simmering water and keep on stirring until it changes color and then slowly it attains the browny sticky state.
All the above methods are explained in various sites and i just compiled here.check that and make it using the easiest way.For me this one seems so easy and we did not need condensed milk for making this one.Just and milk and sugar is enough for the recipe.
We are using baking soda which makes the toffee and creates air inside the molecules and slowly changes color and texture.Switch off the flame when it reaches the thick ganache like consistency.You have to be careful once we add the baking soda to it.Completely lower the flame while adding and the entire process should be on low flame.

toffee made with milk,sugar and vanilla extract
- Whole fat milk - 500 ml
- sugar - as per taste
- vanilla essence - 1 teaspoon
- baking soda - 1 teaspoon
- Boil the milk in medium flame and keep on stirring.Use wide sauce pan for the recipe.
- Once it reaches the boiling point,lower the flame and add the sugar and keep on stirring.
- Make sure sugar melted completely and then add the baking soda.
- The milk will arise up as soon as you add the baking soda,so keep on stirring.This will continue for 15 minutes and then it will start to thicken up.
- After 25 minutes you can able to see the yellowish color of milk there and there starts the toffee making.
- After 45 minutes it will get light browned or in light caramel color and it starts to thickening.
- Now add the vanilla essence and keep on stirring.You will notice the final stage after few minutes,there get a thick sauce.
- Switch off the flame at this stage or make the toffee more thick by stirring continously in low flame for another 10 minutes.
- Switch off the flame once you get a desired consistency and dont worry when your toffee is little light in texture.It will be more thick when it is completely cools down.
- Cool and refrigerate it.
