Homemade Cheese Its

I just made these for my daughter, Emma, who is on a gluten free diet. (Recipe here).They are AMAZING! The recipe called for all purpose flour, but I replaced it with half a cup bean based flour and half a cup of a rice based flour. They turned out perfect! You can’t even tell that they’re gluten free. Seriously, why can’t I ever find gluten free crackers in the store like this? These are soft (unlike most GF rice based crackers), and they’re cheesy, and they have the most amazing flavor!

Some things I did a little different:

I cut mine into squares. The recipe called for cookie cutters, which were adorable! But I was lacking in ambition.

I used GF flour. It worked our great to just substitute GF flour, no adjustments required!

I sprinkled course sea salt on top of mine before baking, just enough to give it a little more saltiness.

These crackers were ridiculously easy to whip up. It took me about 5 minutes to make the dough, it had to chill for 5 minutes, then it took about another 5 minutes to roll it, cut it, and get it in the oven, 15 minutes to cook, and DONE. That’s 10 minutes of actual work. They’re easy, only have 5 ingredients, and they taste FANTASTIC! I think they’re going to be a staple in my house from now on. I’ll have to make a quadruple batch!
