Healthy “Brownie” Granola Bars

Hope you’re well, and ready for an influx of vegan recipes 😀

So healthy “brownie” granola bars are my go to breakfast for during the week. They are seriously tasty, and feel a bit naughty, however they are filled with lots of good stuff!

Warning, your hands will get messy, but hey that’s all part of the fun, right?

Recipe:

  • Cocoa powder (I pour into a cup, about 3/4 full)
  • 2 x 150g packs of pitted dates
  • 50g peacans
  • 50g almonds
  • 100g walnuts
  • 150g rolled oats

Optional – Toast your oats, pecans and almonds for 10 mins in the oven at 180 fan oven

Method:

  • Add the pitted dates to a bowl of warm water for 10 minutes.
  • Blitz your almonds and peacans into small pieces and add to the oats.
  • Add the walnuts to a food processor and blitz into a meal blend.
  • After 10 mins, add the drained pitted dates to the food processor and blitz until they are in small pieces.
  • Add the walnuts and cocoa powder and blitz for around 30-60 seconds. You may need to push the mixture down a few times throughout this process.
  • Add the mixture to a mixing bowl along with the oats, pecans, and almonds.
  • Mix together with your hands to blend all the ingredients. Once fully mixed, add to a lined baking tray and spread evenly. I find using my knuckles works well to flatten the mix on the baking tray, and doing so is oddly satisfying 😀
  • Add to the freezer for 15 minutes, then cut into slices. I usually cut into chunky slices which makes 10 bars in total, but you could easily cut into smaller bars, or even small chunks to serve as bite sized treats.

These will keep in the freezer for a few weeks, however it’s unlikely they will last that long as you will have munched them all.
