Halloumi Salad

I am always doing something very quick and easy for lunch, since it's only me and baby C and we are definitely not sharing plate ; )

I am trying to eat lots of protein for lunch especially when I have been working out in the morning. You sure want to feed those tiny (growing) muscles with some protein so they can grow even faster. Also, it helps me stay full and prevents me from snacking during the afternoon.

This is what I had today, just some green salad, sprinkled with olive oil, cherry tomatoes, avocado, fried halloumi, which I eat after squeezing some lemon juice on it, and some full fat greek yogurt sauce on the side (not necessary but tasty and also adds to the intake of protein).

Halloumi is a semi hard cheese from Cyprus, made from a mixture of goat and sheep milk, it's soooo delicious!!! and has lots of protein - 20 % (!) hardly any carbs, but is high in fat - about 25 %. I slice it and fry it in a pan in some olive oil for a couple of minutes. Mmmm yummy, I just love this Cypriot cheese! You have to taste it if you haven't. You can also fry it with some garlic : )
