If you are looking to cook one dish that will please adults and kids alike, this might be it. Crispy pork chops paired with a medley of vegetables and dressed with a sweet and slightly sour sauce. The Hainanese pork chop may not be as famously known as its cousin Hainanese chicken rice but it certainly doesn’t pale in taste.
I sometimes cook just this one dish for dinner. It already has meat and vegetables in it doesn’t it?

HAINANESE PORK CHOP
Serves 3-4
Ingredients for Pork Chop:
- 350 gram pork chops (make sure they are not too thick)
- Salt, to taste
- White pepper powder, to taste
- All purpose flour, for dusting
- 1 egg, beaten
- 1 teaspoon water
- Bread crumbs, for coating
Other Ingredients:
- 1 tablespoon oil
- ½ onion, sliced
- ½ carrot, cut into small cubes
- 2 tomatoes, sliced
- 50 gram sweet corn
Seasoning:
- 120 ml water
- ½ teaspoon corn flour
- 2 teaspoon light soy sauce
- 6 tablespoon ketchup
- 2 tablespoon sugar
- ½ tablespoon vinegar
- ½ teaspoon sesame oil
Method:
- Clean the pork chops and pat dry with kitchen paper. Tenderize the pork loin with a meat pounder or the back of a cleaver.
- Season pork with salt and pepper.
- Crack egg into a shallow dish. Add 1 teaspoon of water and mix well with a whisk.
- Coat the pork with flour. Shake off excess flour and dip pork in egg, then coat with bread crumbs.
- Deep-fry pork chops in a wok or pot with preheated oil for 2-3 minutes each side. Place pork chops on a cooling rack and drain the excess oil.
- Cut pork chops into ¾-inch pieces and place on a plate.
- Mix all ingredients for seasoning together. Set aside.
- Heat up 1 tablespoon oil in a wok. Add onion, carrot, tomato and sweet corn. Stir fry until onion is soft.
- Add seasoning and bring to boil. Remove from heat and pour sauce over prepared pork chops.
- Serve hot with rice.
