She is the ex wife of military historian and literary critic Paul Fussell. Her book My Kitchen Wars is a seething account of her decade long marriage to him.
I picked my recipe from her cookbook The Story of Corn.I hope you like it.
Grilled Corn with Tarragon-Chipotle Butteradapted from The Story of Corn
1 medium orange
1 teaspoon anchovy paste
1/2 teaspoon pureed chipotle chili in adobo
1 teaspoon lemon juice
2 tablespoons chopped scallions
1/2 teaspoon dried tarragon
1 stick butter at room temperature
2 tablespoons fresh chopped tarragon leaves
6 ears fresh sweet corn in husks
DirectionsUsing a sharp knife or vegetable peeler, remove the zest from the orange. Cut the lemon in half and squeeze half of the orange to get approximately 1/2 cup of juice. In a food processor or blender, blend orange zest, juice, anchovy paste, chipotle, lemon, scallions and dried tarragon. Puree until smooth.In a small sauce pan heat the butter until bubbling. With the motor running in the food processor or blender add the butter through the opening at the lid. When the mixture is smooth, transfer to a dish and stir in the fresh tarragon. Prepare a grill to medium low. Turn back the husk of the corn, not removing them all the way. Rinse the ears of corn and remove the silk. Place the corn on the grill to steam 5-8 minutes. Transfer the corn to a platter and gently remove the husks and put the ears back on the grill, turning just enough to scorch slightly on all sides.Brush the hot corn with the seasoned butter. Pass extra in a serving dish.
