Grape Cornbread and the Feast of Transfiguration

When Jesus is transformed and becomes radiant in glory on Mount Tabor is known as the Feast of Transfiguration.

Today is the Feast of the Transfiguration. This feast commemorates the transfiguration or metamorphosis of Christ on Mount Tabor, also known as Mount Transfiguration. He appears before the Apostles Peter, James, and John as if he was glowing white. There was a voice from the clouds proclaiming "this is my son."

Traditionally, the end of summer means harvesting fruits, such as grapes. The feast of the Transfiguration includes the blessing of the grapes. I grew up in Virginia and decided to make a southern dish with the addition of grapes. I love cornbread. It is the quintessential southern dish. It makes no difference if you like it sweet or not. These grapes added make it over the top delicious. You can taste the cornbread but you also get a burst of grape in almost every bite.

Grapes can be cooked. I know it sounds weird but I love to cook them with sausages and in the end add a bit of balsamic vinegar to cut the sweetness of the grapes. I even have a meatball recipe using grape jelly.
