Now that we got that out of the way, on to my post.
This is one of those surprise recipes that you were not expecting. I got the recipe and modified it from a book called The Bread Machine Bible. It was one of those recipes where you have all the ingredients in your pantry. I modified this so that you can bake it in a regular oven instead of your bread machine. The directions were referring to a bake only option which I don't have on my machine.
This is not your typical gingerbread in the sense that it doesn't have the heavy cinnamon taste that we associate most gingerbread's with. It is a bit lighter because baking powder is used for the leavening agent. Oh by the way, it does have ground ginger in it. Please give this recipe a try, I think you will be glad you did.
Golden Gingerbread1/2 cup brown sugar
1 stick of butter
1/2 cup light corn syrup
1 2/3 cups all purpose flour
1/4 teaspoon salt
1 teaspoon baking powder
2 teaspoons ground ginger
1 egg
2/3 cup milk
Directions
Preheat your oven to 350 degrees.Grease or spray a loaf pan.In a medium saucepan, heat the brown sugar, butter and syrup until blended. Set aside and allow to cool.In a medium bowl combine the flour, salt, baking power and ginger. Add the eggs and milk and beat until blended with a wooden spoon or mixer. Add the cooled melted mixture and blend everything together. Pour the mixture in a loaf pan and place in the middle of the oven. Bake for 30-40 minutes or until a toothpick inserted in the middle of the loaf comes out clean. Remove the bread from the pan and allow to cool on a wire rackServe warm or cold.
