Gluten Free Thursdays: My Story!!

Okayyy so as many of you may have noticed, I live my life mostly gluten free. I often post some of my favorite gluten free recipes and other times you may find a picture on here of me with a beer in hand. This is exactly why I am writing this post as I want share with all of you my gluten free journey!!

So here I go, interviewing myself… this should be fun.

+ FLxx: Gluten-free since? 2010

+ FLxx: Are you completely gluten-free? Not completely, probably 90%.

+ FLxx: What made you decide to go gluten-free? I have always been more tired than everyone around me, and no doctor could really put there finger on how I can sleep 12 hours+ and still be tired. Finally I was sent to an eastern based doctor who decided to run tests to see if I could have a gluten allergy. I did. After that I went home and cleaned out all my products that contained gluten.

+FLxx: Typical day of meals for you on a gluten-free diet.

Breakfast: usually my boyfriend makes me scrambled egg whites with fruit, avocado, & gluten free toast… oh and a spot of tea.

Lunch: cherry tomatoes, a chickpea patty open face on gluten free toast with Durkees.

Dinner: Brown rice and some steamed Brussels sprouts or gluten free pasta.

Dessert: I can’t lie and tell you that I don’t like ice cream, cause I do… yet sometimes it will be a fruit popsicle or greek yogurt and honey.

+ FLxx: What’s the hardest thing about being gluten-free? Finding options when eating out can be difficult, and it is somewhat hard to ask restaurants to alter your meal to fit your diet.

+ FLxx: What do you like about being gluten-free? Since going gluten free I have noticed my energy increase tremendously. I am more motivated than I was prior and I all around feel much healthier.

+ FLxx: Do you ever cheat? Once in a while I will cheat here and there. Usually my weaknesses include beer and burritos mostly. The beer because it is the only alcohol I like to drink and I haven’t found a good GF option… yet. The burritos usually occur on a lazy sunday where I know I can just veg out if I’d like.

+ FLxx: What gluten food do you miss the most? Burritos (see above).

+ FLxx: What kind of advice would you offer to anyone who is considering gluten- free? Check with a doctor first. If you don’t need to go gluten free… don’t. If you body accepts something, it probably needs it. Also, going gluten free isn’t really a way to lose weight. At first you lose a couple pounds, but once you get adjusted… your weight will readjust.

+ FLxx: Where are some of your favorite places to eat gluten-free? Here in San Diego I love 2Good2B (great cupcakes), Leucadia Pizzeria (I always get the GF pear, gorgonzola, and arugula pizza), Lotus Cafe, and my local grocery store- Cardiff Seaside Market.

+ FLxx: What are some of your favorite gluten-free brands/foods? Udis products are my favorite (even if they are a little on the pricey side), corn pasta from Trader Joes, tamales (naturally gluten free), Glutino also has tons of yummy snacks… and Annie’s gluten free mac & cheese is to die for.

+ FLxx: Can you offer some advice about eating out at restaurants when you are gluten-free? Try to work up the courage to ask people to sub things out for your, usually they are pretty friendly about it… and some places may even have a separate menu. Get creative, instead of a bun ask for your burger to come on a bed of lettuce instead.

+ FLxx: What are some of your tried-and-true gluten-free recipes?

  • Easiest, and most delicious, peanut butter cookies on earth.
  • Gluten free, Mickey Mouse shaped, chocolate chip pancakes.
  • Ridiculously amazing blueberry cream cheese cupcakes.
  • Savory & delicious kale chips.

FLxx: There’s a lot of controversy around the idea that gluten-free is not a healthy lifestyle. What do you have to say about that? If your body can’t process a certain food, you usually eliminate it. This is the same with gluten… some people just can’t break it down as easily as others. I think that if you are using it as a method to lose weight, it probably isn’t the best idea for your health. Just remember, your body will tell you what you need and what you don’t.
