Game Day Eats!

The Super Bowl is really about two things: Pig skin (you know, the football) and pigging out.  For many of us I suppose commercials fit in their somewhere too.
Regardless of who is playing the game, you’ve got to have the right food.  That doesn’t mean you have to wake up the next day feeling like you made a pig of yourself, or feel badly that you hogged all of the chips (pig puns stop here – promise.)

Here are just a few tasty ideas with a healthier twist for you to consider, without just settling on crudite.  
Everyone loves nachos.  So easy to make, and easy to adapt.  Take your favorite chips and top with refried beans, diced tomato, black olives, sliced jalapeno and guacamole.  You can always add non-dairy cheese or tofu sour cream for additional flavor and gooey-ness (not sure it's a word but it works!)  You can also keep some of the chips to the side with a variety of salsas for sampling ~ maybe a tomatillo, a pico de gallo and a mango...
Chili feels like a must have too.  Beans, onions, tomato, bell pepper, some cumin, maybe even a little cayenne, and you're good to go!  I love adding TVP, a vegetable protein, to round out the texture, and again, you can always top with with vegan cheese or sour cream. 
How about vegan potato skins?  Take one potato per person (or per two people depending on how much other food you'll be serving,) wash them and cut them into rounds.  Toss them in a little EVOO or spray them generously with baking spray.  Then spread them on a cookie sheet with a little cinnamon, brown sugar and kosher salt.  Roast them at 350 degrees until crispy (you may want to add a touch of extra oil after 15 minutes to help them crisp up.  While they are cooking, add 2 tablespoons of finely chopped scallions and toss them into non-dairy sour cream and mix well, and crisp up some vegan bacon.  Once the potatoes are done, top them with the scallion mixture and then crumble some of the vegan bacon on top and serve!
