carrot halwa or gajar ka halwa - punjabi dessert recipe with step by step pictures.carrot halwa is my favorite recipe and i tried only once and this is my second try on that.this is an easy to make halwa recipe,there you need no consistency of sugar syrup or no fear of burning the recipe too.you can simply make this with condensed milk too.Saute the fresh grated carrots for few minutes and then add condensed milk and there you get your quick easy carrot halwa.This process is little time consuming but you will get the juicy dessert as the final product.

this post is the updated post as i want to repost this yummy dessert which i prepared last week and clicked few shots for posting here.the second time i tried this one and it tastes yummy and i never thought i made it finally.V bought these juicy Delhi carrots from market and i wanted to try some dessert with it and thought of my old post with little blurry pictures.So prepared that and served that on lunch time.He appreciated me and it tastes wonderful and juicy.Really these carrots are very well goes with desserts than normal ones and it get soft easily and also this is little sweeter than ordinary carrots we bought.try this wonderful easy dessert and let me know how it came.Lets move on to the recipe,

halwa recipe using fresh carrots

  • Carrot(grated) -200 gm
  • whole milk-500 ml
  • Sugar-200 gm
  • dry fruits - cashews and raisins roasted in ghee
  • Cardamom powder - a generous pinch
  • Ghee/Clarified Butter - 2 tablespoons approximately
Instructions
  1. Take the milk in heavy bottomed sauce pan or in non stick kadai,then bring it to boil in medium flame.

  2. now add grated carrot to the milk and lower the flame there to avoid burning in the bottom.cook till the milk get absorbed and scrape the sides everytime to get milk solids.

  3. then add sugar and cook this in low flame only and keep stirring until it comes together.Add one teaspoon ghee here and mix it well.You will need approximately 2 tablespoons for the recipe.

  4. add ghee little by little and cardamom powder to it and keep on mixing.In one stage it will becomes unstick to the pan and on this stage switch off the flame.

  5. Add roasted cashews and raisins to it and mix it.Finally serve it with sliced almonds.
