The best thing about October? Well, apart from the changing colours, woollens, autumn leaves & winter boots obviously....soups & stews and fresh, warm bread to dunk in it.
I've just made Jamie Oliver's Store Cupboard Lentil Soup for dinner tonight (as shown above) which is such a satisfying meal.
We've already had one round of coughs & colds this term, so it's a great way to make anyone who is a little under the weather feel a bit better & also give everyone some extra vegetables & nutrients. I like to pack my soups with as many beans & pulses as I can. Here are some of my Pinterest favourites, some I've made & some I'll be making this season....
sweet potato, kale & corn chowder
beef barley soup
lemony chicken soup with orzo, dill & coriander
red lentil & carrot soup with chili & coconut
nordic pea soup(made this, it's sooo good!)
chicken & potato chowder (my daughter's favourite, i've made this so many times!)
