This is a short post today (and my apologies for no photo) but my friend and I concocted this dish last night and it was just so simple and so good!
At Whole Foods, or at another health food market near you, pick up some fava beans and steam 2 cups of them until hot.
Then mince some fresh mint leaves and toss them into the beans with a tablespoon or two of extra virgin olive oil, salt and pepper to taste, and a cup of micro arugula greens.
This dish has a wonderful, earthy flavor and is packed with protein and vitamins. It's a perfect accompaniment to roasted potatoes and a salad or sauteed vegetables and takes just minutes to prepare.
