sweet potato, chickpea & spinach curryI made this last night for Sunday night supper, everyone loved it....the sweetness of the potatoes, the perfect combination of the spices, the flavours were so good....easy to make & definitely something I will be making again.tip - the recipe says to use thick coconut milk, i didn't actually realize there were different types of coconut milk - my curry was thick-ish but i'll know for next time. I love chickpeas so for my five recipe series this week I thought they would be perfect.I often make Jamie Oliver's "pasta e ceci" (pasta with chickpeas) which is from his "Jamie's Italy" book....my husband always says it reminds him of something his mother would make when he was ill as a child....an Italian version matzo-ball-chicken-soup type of dish I guess!Here are some of my favorite online chickpea recipes....
