Fig Oatmeal Bars

These fig bars are full of yummy goodness. They can be made year round because I used jam for the filling.

Today is Palm Sunday. Every religion and society has their own traditions. In the Catholic faith we give parishioners palm leaves before the enter Mass. (On a side note, the church also saves the palms and burns them the following year for Ash Wednesday. What a way to recycle right?)

As of right now there is no Mass. Until we flatten the curve on this pandemic it is ordered no public gatherings of more than 10 people. It looks like we will not be having a Easter Mass either. The order is until June 10th. They will reassess the situation at that time.

Easter is one of the most significant holidays in our Catholic faith. Palm Sunday marks the beginning of our celebrations. We normally celebrate by singing hosanna and waving our palm branches as we honor Jesus entering Jerusalem.

It is believed that Jesus ate figs after he entered Jerusalem. Figs are not in season right now. They become ripe here in Virginia around mid to late August. I used jam so you can make these bars anytime of year.

Ingredients:

2 sticks salted butter at room temperature

1 1/2 cups all purpose flour

1 1/2 cups oats

1 cup brown sugar

1/2 teaspoon salt

1 teaspoon baking powder

1 jar of fig jam 10-12 ounces

Directions:

Preheat oven to 350 degrees.
