This Feta tart is fabulous! I love recipes that have simple ingredients but taste so good. It kind of reminds me of a pizza but not really. The feta makes it a bit salty which you are not expecting.
This tart you should eat right away. I don’t like it after it has cooled and has been sitting. It doesn’t reheat well either. So if you make this, make it for a big crowd or cut the recipe in half.
This Tart is of Greek origin and no wonder, leave it to the Greeks to take the most simple and humble of food and make them delicious!


Ingredients
- 6 tablespoons olive oil
- 2 tablespoons vodka
- 1 egg
- 1 cup water
- 1 1/4 cup flour
- 1/4 teaspoon baking powder
- 10 oz feta cheese crumbled
- 2 tablespoons unsalted butter softened
Instructions
- Preheat oven to 500 degrees. Put the 15x13 baking pan sheet in the oven for 10 minutes.
- In a large bowl whisk vodka, egg, and water in a bowl. In a separate bowl whisk four, salt and baking powder. Pour wet mixture over dry mixture and whisk until smooth.
- Brush oil on hot pan and add batter. Smooth batter with a spatula to coat the bottom evenly. Sprinkle cheese over batter and dot with butter. Bake for 20 minutes or until golden brown and crunchy. Let cook slightly before cutting and serving.
