Do you have some leftover feta cheese in your refrigerator? At our house we love to make Gyros and Greek salad, both with feta cheese. We often end up with some leftover feta that sits in the refrigerator until it goes bad. This Feta Gravy over chicken recipe is an excellent way to use up your leftover feta. It a mildly cheesy, satisfying gravy that goes great over chicken and steamed broccoli.

Feta Gravy Over Chicken
Ingredients
2 Tbsp vegetable oil
6 chicken breasts, boneless and skinless
1 Tbsp butter
1 Tbsp flour
12 oz evaporated skim milk
3/4 cup crumbled feta cheese
Salt and Pepper to taste.
1 Tbsp chives, dried or fresh minced
Heat vegetable oil in skillet. Salt and pepper the boneless skinless chicken breasts. Fry chicken in the heated oil until fully cooked. Take chicken out of the pan and set aside, covered.
On medium heat, using a whisk, stir flour into the heated oil to make a roux. Over the heat, stir in the evaporated milk. Keep stirring until thick and bubbly. When thickened stir in the crumbled feta cheese (add more if you like). The feta is fairly salty, but salt and pepper the gravy to taste. If the gravy seems too thick, stir in some more milk.
Serve prepared Chicken with Feta Sauce over top. Garnish with minced chives.
