Feta Cheese Salmon

It's not unusual that children don't like to eat fish. My kids however, seem to love salmon, so we eat that at least every week. Moreover, it's so healthy, rich in protein and healthy fat, lots of omega-3! Sometimes it gets a bit boring though. I usually make the salmon in the oven, but if we are really hungry and there is no time to wait for the oven to get warm, I simply fry it in a pan in some olive oil. Did you know that olive oil and salmon go together as best friends?! I always add olive oil when I bake the salmon in the oven as well, some oil at the bottom of the ovenware and some on top of the salmon.

As I said, it sometimes gets a bit boring so to spice it up I add whatever I have at home (almost...). The other night I mixed greek full-fat yogurt with feta cheese, added some salt and pepper, and spread it on the salmon before putting it in the oven. It tasted so good! And my children loved it too! I served the feta cheese salmon with rice to the kids. Me and my husband skipped the rice and ate the fish with baby spinach leaves sprinkled with some lemon, olive oil, berries from a pomegranate, and feta cheese (I love feta cheese!!) It was so delicious!

  1. Heat oven (390F/200C).
  2. Rinse salmon fillet with water and dry with paper towel.
  3. Put the salmon in a baking dish after adding some oil in the bottom of the dish.
  4. Crumble the feta cheese and blend it with greek yogurt (I use full-fat) and some salt and pepper.
  5. Spread the feta cheese-yogurt mix on to the salmon.
  6. Bake for about 15 minutes depending on the oven and the size of the salmon. Do not overcook!
  7. Serve with a nice salad if you are watching your weight and add rice or potato to your kids ; )
