But I'm hoping it was just as cute.And that look of love.Love to eat you look ,or love to smash you look.Luckily,it was the love to eat you look.
These are Eggless.Yes, dear people, eggless.Almost vegan. You can make them totally so...And delish. Dee-Lee-Yumi-lichious.....And super easy.And 18 of these cupcakes.
So you must just gather the stuff and get cracking. No eggs to crack, but whatever...
For the
Eggless Triple Chocolate Cupcakes-It's All About Love Cupcakes
You need
1 1/2 cups all purpose flour or maida1 tsp baking powder 2 tbsp cocoa powder1/2 tsp bicarbonate of soda or baking sodaPinch salt (optional)1 cup sugar1 cup warm water1/4 cup oil or 1/4 cup plus 1 tsp melted butter1 cup chopped dark chocolate or chocolate chips1 tsp vanilla essence 1 tsp vinegar
Heat your oven to 200 C and line your muffin trays with cupcake liners.
Sift the flour, baking powder and baking soda and cocoa powder with the salt if you are using oil. Add in the caster sugar (if the sugar is granulated,run it through in your dry grinding jar or coffee bean grinder... Till you get a powder)
In a bowl mix the water, vinegar and oil/ butter. Add in the vanilla and the chocolate. You can place this on the heat till it becomes slightly tepid. Yup ,the idea is to almost melt the chocolate.Cool a few minutes. The liquid should not be warm,just Luke, Luke warm.
Now tip in the dry stuff into the wet and whisk lightly together till all lumps disappear.Just a minute should do. If you let the batter sit, the chocolate will cool, making the batter dense.
Scoop out even amount into the muffin tray, one ice cream scoop per indentation. And into the oven.10 minutes and you should be near the oven.Keep an eye on the muffins. 15 odd minutes should do it. If in doubt, insert a toothpick.Clean and you are done.
Bring the tray out,wait 5 minutes and pop out the muffins on to a wire rack.
Allow to cool.This was one part of the triple chocolate.
For the triple Chocolate bit.You need
300 GMs dark chocolate 150 mils low fat Amul cream.50 GMs Amul butter 1 tsp honey.
Chop the chocolate and take 200 GMs chocolate and all the cream in a glass bowl.
Over a double boiler ,or a PAN of simmering water till the chocolate melts and is one liquid thing. Add the honey. Remove three tablespoons into a small bowl and place in the fridge.To the remaining ganache, add the remaining chocolate and the butter.
Pop back onto the heat.Allow the butter and chocolate to melt and mix well.
Chill the mix till you're ready.
Scoop out a little bit from the center of the cupcakes.Place the three tablespoons of liquid like chocolate into a piping bag and pipe into the holes.
Now put the cupcakes back into the fridge to set. This frosting is not going to set. Jus settle down to rest for greater glory.Second chocolate is slightly liquid and mushy... Well hearts are full of mush.... Soft frosting will seep into the cupcakes. So you have this intense chocolate cupcake and a liquid creamy center.
And then it's time to whip up the set ganache.Place with a Wilton No 1 star nozzle into a piping bag and frost out the pretty stars.Awesome.Now dot with some sprinkles for color and sit back and enjoy the expressions on your people's faces.
And tell me, the Eggless Triple Chocolate Cupcakes are all about love. And the effort was worth it.
