Edamame Recipe – Healthy Friday Snack

It's Friday again! Our week has been rather unpleasant since our three-year-old has been sick all week, poor child. He is much better now and we are all looking forward to the weekend. We will have fun in the snow, dinner with good friends and just spend time together as a family. In my opinion you can't spend your weekend in a better way.

One thing we always do on Fridays is enjoy some extra yummy food and we love to snack on something when watching a movie when the kids are asleep. We try our best to stay healthy and not choose the regular unhealthy stuff like potato chips - so delicious!

My healthy snack favorite is edamame, high-protein soybeans, which you prepare while their still in their pod. You steam or boil the edamame and enjoy them sprinkled with salt - I prefer sea salt. You should not eat the pod, just the beans inside but you put the pod in your mouth, slide it between your teeth and squeeze out the beans in your mouth, that way you get the salty taste. Oh my god, it's so tasty!! And it's super healthy, rich in protein and fibers and low in fat and carbs. Can it get any better?

Edmame is so easy to prepare. Just boil the edamame (I use frozen) for a couple of minutes (follow the directions on the package - the boiling time can vary by brand). Remove them from the water and sprinkle salt on them. Enjoy!
