Eating Local

We all know it can be a challenge to dine out as a vegan, so when I find somewhere new, and local,  that does that well, I am thrilled.  Local, in Chappaqua, NY, is my fave new place for casual, vegan-friendly fare.  It is not a vegan restaurant, but it caters to our palates for sure.
Eating LocalI was starving when I met my friend, Lori.  It was nearly 1pm and I had already worked out and been to the city and back for a meeting, with coffee and a protein shake early on.  Thankfully, Lori eats like me so we were happy to share or try the same things!  It was spring day, but here in the northeast, that has mostly meant brisk, damp weather.  I wanted something hot to start, and while I could have opted to warm myself with the vegetarian chili (hold the cheddar,) instead I went for the vegan split pea ~ just a cup to take off the chill.  Unlike too many pea soups, this boasted some great flavor and wasn't too muddied up.  You could actually see the peas in the broth for a change.
Eating LocalDeciding on an entree seemed challenging at first, but in a "Wow, I have so many options!" kind of way.  Did I want the hummus wrap with carrots, cucumbers and greens? Sides of farmers vegetables or a green salad? A quinoa and bean burrito? The Asian salad with rice noodles? While mulling it over, the owner told us about a mixed greens salad with pieces of roasted butternut squash and sunflower seeds.  The dressing was a white bean puree!  Yes - brilliant.  You get your protein, and save the fat and calories by not using a traditional dressing.  I did worry it might be a bit to gloppy, but it was delicious.  I have to make it at home.  That's the beauty of dining out.  While my bank balance would love for me to cook a bit more often, at least when I go out, I find new ideas for when I do have the time to play in my kitchen.
