Easy Moist Chocolate Cake

This weekend was both Easter and my Son-in-law’s birthday.  At the same time, I have been worried about my half-sister who has been in the hospital for a heart ailment that we both inherited from our in-common father.  She is about 20 years old than me and so I’ve been distracted by the seriousness of that situation however, I needed to make a cake.  I pulled up Face Book and my “memories” showed me several posts I made or had posted to my wall – and my cousin Dana had posted this quick birthday cake several years ago on that date and said I should make it for my son-in-law’s birthday – although, truth be told, I found it on the Betty Crocker website where it was cutely called Better-Than-Almost-Anything-Cake.  I decided that this was the day because it was quick, used convenience items and appeared to be pretty simple.  You may even have all the things you need in the pantry right now.

Ingredients:

1 Chocolate Cake Mix

4 Tablespoons brewed coffee, cold (optional)

1 can Condensed Milk – that’s the think sweet kind

1 jar Hot Fudge ice cream topping

1 jar caramel ice cream topping

1 extra large non-dairy topping – like Cool Whip

Sprinkle – optional

9 x 13 glass or metal pan

Directions:

Make the cake according to box directions using the glass or metal pan.  If you want depth in the flavor of a boxed mix, put in 4 Tablespoons of brewed coffee taking out the same amount of water.

Let the cake cool for 15 minutes then using a wooden spoon handle and make holes in it every 2 inches or so.

Pour in the sweet condensed milk over top of cake – I have left this out and it’s been just fine!

Pour the jar of caramel and fudge over top of cake as well like this:

Put foil over top of cake pan and put in the refrigerator for at least 2 hours then add the Cool Whip and then the sprinkles.

Ta-Da!  You are done and this is a great cake to eat.  The flavor combinations are endless and while it takes very little effort – it seems like you took lots of time to do it.  In fact, it tasted so good that his mom bought a cake and it was mine that he ate more than one piece of!  What about White cake with strawberry and lemon ice cream topping or even jam?  Oh yes – the possibilities are endless!
