Cheese makes the world a better place, which makes it hard to eat healthy.  Here’s a few easy ways that you can get your cheese fix in a healthy way!

When You’re Craving Pizza

It takes about 10 minutes to make a ricotta and tomato flatbread.  All you need is whole wheat pita or flatbread, fat-free ricotta cheese, and tomatoes (I like to use a mixture).  Preheat your oven to 350 degrees, spread a thin layer of ricotta on your flatbread, and slice a couple tomats and place them on the top.  Pop this little guy in the oven for 8 minutes.  It’s the same texture as pizza, the flavors are similar, and you still get your cheese.

When You Want Something Crunchy

Healthy Snack

Top an apple cinnamon rice cake with a tablespoon of fat-free cottage cheese, and a sprinkle of cinnamon.  This is really light, and super refreshing.  Plus, cinnamon gets your blood flowing.  I like to snack on this before working out, or if I need a late night snack.  It totally gets rid of my cheese and crackers craving.  If you hate cottage cheese, you could top your cake with peanut butter instead.

When You’re Dying For A Grilled Cheese

Nothing is more comforting than a warm grilled cheese.  Cut down on the fat by using one slice of multi-grain bread, one wedge of laughing cow cheese, a sliced strawberry, and a drizzle of honey.  Lightly coat one side of the bread with smart balance, and the other side with the laughing cow cheese, cut in half, arrange the strawberries, drizzle the honey, and cook.  Not only does this satisfy my grilled cheese craving, but it also gets rid of any bagel cravings too!

When You Want Cheesecake

Take 2-3 tablespoons of low-fat vanilla yogurt and place in a small tuppie.  Top off with a few dark chocolate chips and graham cracker crumbles.  Put it in the freezer for a few hours.  Tastes as decadent as cheesecake, without a trace of cheese.

When All You Want Is Mac & Cheese

Healthy Mac and Cheese

Make a sickening baked dish.  You’ll need a box of organic white shells (like the mac in a box), a box of tri-colored pasta, almond milk, fat-free cottage and ricotta cheeses, and a bag of frozen veggies.  Cook the pasta according to directions (I use a box organic shells, and a 1/2 box of tri colored pasta), and steam the veggies at the same time… I like to use a bag of peas, peas and carrots, or broc and cauliflower.  Drain the pasta, and place it back in the pot with the veggies.  Add the packet of cheese, 1/4 – 1/2 cup almond milk, 2 tablespoons fat-free cottage cheese, 2 tablespoons fat-free ricotta cheese, a sprinkle of crushed red pepper, a sprinkle of white pepper, and a sprinkle of old bay.  Stir until blended, and place in a baking dish.  When you’re ready to eat, bake at 200 degrees for about 35 minutes.  This is an amazing dish for guests, you can prepare it early, and have it ready when they arrive.
