Do you have any traditions on Fat Tuesday? I love to make a Dutch Baby. It is a simple pillowy cross between a pancake and a popover. Perfect sprinkled with powdered sugar or fruit.

Help me celebrate the final days before Lent. It is traditional to eat pancakes right before Ash Wednesday.
It goes back to a time where eggs were forbidden by the Church during Lent. People would make dishes like
pancakes to use up the eggs and milk they had in their pantries. Instead of slaving over the stove making pancake
after pancake, why not make a Dutch Baby? This is a kind of fix it and forget it meal. Let’s celebrate by adding fruit
or other toppings. This puffed up cousin of the pancake should not be relegated to just breakfast. You can make this for
lunch, dinner or anytime.

Dutch Baby

Ingredients:

1 tablespoon butter
1/2 cup all-purpose flour
1/2 cup 2% milk
2 tablespoons white sugar
1/2 teaspoon salt
1 large egg

Directions:

Heat your oven to 425 degrees.
Melt butter in a 10 inch cast iron skillet over medium heat.
In a a medium bowl combine flour, milk, sugar, salt and egg. Stir until moist. Pour batter into skillet and cook over medium heat for one minute. Bake in oven for 18 minute or until golden brown.
Sprinkle with powdered sugar if desired. Cut into quarters serve immediately.
