Double Chocolate Brownies

Sometimes all you need is a crusty ,fudgy , dark, chocolate brownies.
Double Chocolate BrowniesAnd then ypu see the Domestic Goddess Nigella Lawson digging into some decadent Brookies as a midnight snack challenge on MasterChef Australia, you need that double chocolate fix yourself.
You do.
Try convincing yourself otherwise.
You'll loose.
Join the club.
Admit it, its more power in your hands this way.
And double chocolate.
So these are crusty. If you let them cool. And then you bite into them when they are warm and you feel the chocolate melt in your
Double Chocolate Brownies. Oh ,and its almost surrounded by the crusty crumb of the brownie.
Its so awesome,it should be declared illegal.
And there is no way you can skip these. You call yourself a baker? This is a rite of passage.

For the
Double Chocolate Brownies
You need
1/4 cup cocoa
1/4 tsp baking soda
1/3 cup melted butter
1/4 cup boiling water
1 cup sugar
1 large egg
1/2 tsp vanilla
1/2 plus 2 tbsp all purpose flour or maida
1/4 tsp salt - -optional
1 cup chopped chocolate
Preheat oven to 175C.
Line 8*8 inch pan with parchment paper or an A4 paper if you cant manage the parchment. Just grease the paper and also sprinkle flour so that its easy to lift the brownie out.
Mix cocoa and baking soda. Blend in half the melted butter.
Add water, stir.
You can add less water and some of the Bailey's to up the ante. Rum does nothing much , so dont waste the alcohol . Add in sugar and stir till cool to the touch.
Add egg and the remaining butter. Add flour , vanilla and salt. Stir in chocolate and chopped nuts if you want.
Pour into pan and bake 35-40 minutes. You'll know they are done when thet smell like a chocolate bomb has erupted in your oven.
And also you'll keep watch Till it begins to pull away from the edges of the pan.

Cool 10 minutes , lift out using the paper and place on a wire rack and then cut. Ideally you should allow them to cool and develop a gorgeous crust and cut into 9 square brownies.
Dredge some icing sugar over for effects.
