Today is very sunny, making me think of spring but it is windy and very cold reminding me it is still winter here. Basically that means a part of me wants to get outside and run, hop, skip, and jump or at least get outside and THINK about running, hopping, skipping, and jumping. The other part of me wants to stay inside and make some warm comforting food. I compromised by making a comforting dish that is very fattening (because I make it that way) and we generally only eat it at Easter. This year, I’m going to love it TWO times! Most of you have your own recipe, loved by your own family and you wouldn’t change for the world – like me – but I’m sharing mine so that if you ever get a hankerin’ for something different, I’ve got you covered!

Ingredients:

9 eggs, hard boiled – I don’t have any special tips on how to get them that way, just boil them till you think they are done then crack and peel them under cold water.
1 Tablespoon mayo
1 teaspoon mustard
Dashes of Hot Sauce – I use Cholula’s because it’s the BEST! This is the KICK I told you about.
½ teaspoon Dried Parsley
¼ teaspoon Cumin (secret ingredient!)
Salt and Pepper to taste.

Directions:

1. Slice the eggs in half and place yolks in bowl.
2. Mash up the yolks.

3. Throw in the rest of the ingredients and mix it up really well.

4. Pipe or spoon into the eggs.
