paratha recipe is easy to make and you can make your own stuffing with loads of veggies,lentils and meat.this is really easy to make paratha and i used the whole wheat flour for making the outer crust.this paratha need kadalai paruppu or chana dal or bengal gram which is soaked and cooked and then mashed.then it is mixed with spices and the stuffing is made like this.this is not only easier and also gives a full feel to you.So try this for lunch or for breakfast routine as it has more carbohydrates.

make the dough little bit stiff,but not so soft as you make it for chapatis/pulkas.Rest the dough for atleast 15 minutes before proceed the recipe-this helps the dough to relax and the formation of gluten happens there.Again knead it and proceed the paratha making.for the stuffing,soak the bengal gram for 1 hour and drain the water.Pressure cook the lentil for 3 to 4 whistles with salt and enough water and then drain the lentil and set aside.Mash it coarsely and keep it ready for making the stuffing.I used onions and finely chopped ginger along with spices here.We had this for lunch along onion raita and capsicum masala which tastes so good with it.You can pair it with simply curd and pickle for this paratha.lets move on making the recipe.,

stuffed Indian flat bread using bengal gram and spices

Ingredients
  • Whole wheat flour - 2 cups
  • kadalai paruppu/chana dal/bengal gram,soaked - 1 cup
  • onion - 1 finely chopped
  • green chilli - 2 finely chopped
  • ginger ,finely chopped - 1 teaspoon
  • turmeric powder - 1/4 teaspoon
  • red chilli powder - 1/4 teaspoon
  • dry mango powder - 1/4 teaspoon
  • asafoetida - a pinch
  • salt - to taste
  • water - as needed
  • oil - as needed
  • ghee - for brushing cooked parathas
Instructions
  1. In a mixing bowl,take wheat flour and salt and mix it evenly.Add water slowly and knead it to form a soft dough from it and grease it with a teaspoon of oil.Allow it to rest for 30 minutes
  2. meanwhile pressure cook the soaked gram in pressure cooker with salt and water for upto 4 whistles.Wait till the pressure releases.Then drain the gram and mash it coarsely with masher.
  3. In a kadai,heat 2 teaspoons of oil and add finely chopped ginger and green chilli to it and saute it well.
  4. Now add finely chopped onion and cook it till it get soft.Then add the turmeric powder,red chilli powder,mango powder,asafoetida to it and mix it well.
  5. Now add the mashed gram to it and mix it evenly.Add little water to make it evenly combined and add enough salt for the spices.
  6. Switch off the flame once it forms like a dough and cool the mixture.Your stuffing is ready now.
  7. Take dough out and knead it again and separate it into equal sized balls.Separate the mixture into equal balls and it will be same as dough balls.
  8. Roll the dough ball in rolling surface using rolling pin into a thick disc.Place the stuffing ball inside it and fold the dough like we did for momos recipe.

  9. Roll the folded ball gently with the rolling into medium thick parathas.
  10. Heat the skillet and place the paratha and cook it till brown spots appear.brush both sides with oil and remove it once it get done on both sides.Repeat the same for remaining dough and mixture.
  11. Grease it with ghee and serve.
