I love scones but get a bit fed up with the same old recipes so decided to make up my own last week with some dried cranberries and chocolate chips I had in the cupboard. I wasn’t sure how they would turn out as usually when I stray from a recipe things go a bit pear shaped, however, I am pleased to say these tasted just as good as they looked and I have been told I can make them again! High praise indeed!
Ingredients:
- 350g Self Raising Flour
- 1 teaspoon Baking Powder
- 100g Caster Sugar
- 100g Butter
- 30g Dried Cranberries
- 30g Chocolate Chips
- 200ml Milk
- Pinch of Salt
Recipe:
1. Mix the flour, baking powder, sugar and salt in a bowl.
2. Rub in the butter to make fine breadcrumbs.
3. Add the cranberries and chocolate chips and mix well.
4. Gradually add the milk a little at a time and mix until you get a dough like mixture.
5. Roll out the dough on a floured surface to around a 2cm thickness and cut into rounds.
6. Brush the tops with a little milk and sprinkle over a little sugar.
7. Place on a tray (I used our pizza stone as I find it cooks them a lot more evenly) in a pre-heated oven at 180.
8. Bake for around 15 minutes until golden brown. I then left mine on the tray for a further 10 minutes before cooling on a wire rack.
This recipe made 9 good sized scones.
