Can't help it. Here in Delhi, every thing has a masala or a spice mix.
Salted Lassi or Masala Chaas does too.
Every colony has their own halwais or Local Sweet Shop owners have their own special spice mixes that they swear by.
All in North and West Delhi are generally fans of Roopak Spices. A store in Karol Bagh that is generally patronized by the NRI population and their families. So when sweet sister took her stash of spices to North America a visit to Roopak was a no brainer.
Well the spice mix is extremely handy and ensures that you get similar tasting lassi or chass everytime.
And of course, I can not make that trip to Karol Bagh for a spice mix.
So I taste and try and recreate.
And come up with a yummier mix.
Yes sir I do.
For the
Copy Cat Lassi Masala -Masala Chaas in a jiffy
You need
4 tbsp cumin seeds
1 tsp black pepper
1/2 tsp cloves
2 red chillies dried
1 tbsp dried mint leaves powder
1 small nutmeg
2 1-inch pieces cinnamon
2 tbsp black salt or pink Himalayan salt
1 tbsp sugar
In a small sauce pan ,dry roast the cumin, cinnamon,pepper, cloves and dried red chillies over a slow flame.
Break the nutmeg and add it to the spices.
The second the cumin and red chillies begin to change color turn off the heat and transfer to a plate.
Cool a while and grind the roasted spices with the sugar and salt into a fine powder.
Check and sieve to remove the bits of cinnamon and nutmeg left behind.
Mix in the mint powder.
Put into a dry glass spice jar and store away from sunlight. Don't ude a wet spoon and use within two to three weeks.
To make 2 servings of the
Masala Chaas or Salted Lassi
You need
2 cups fresh yogurt
2 cups chilled water
2 tbsp Lassi Masala Spice
Couple of mint leaves.
Pop all this into your blender jar and whizz. Check for salt.
Add a wee bit of black salt if you feel it needed.
Pour into glasses and enjoy.
Complicated?
The flavors aren't. They just blend together to make the summer sun bearable for your body.
All of these are cooling spices. Reducing the effects of the summer sun on your body.
Chillies add a kick that leave a je ne sais quoi taste. Almost like wasabi.
And sugar... again something that the tongue can just discern.
A word of advice.
Nothing elevates a glass of chaas or lassi like fresh mint. So if you have it, add it.
