Humid.
Throats and minds are parched.
And yet you desire something substantial, and amazing in taste, but not anything heavy or warm.
Baking for a cool desert?
Nope...
Buy your biscuits and cookies online.
I wanted to buy chocolate chip ones and because they were not available in my local grocery mart I bought these cookies online. I like to buy most of my essentials like biscuits online.
So with the cookies we made a Layered Parfait.
A low Calorie, crunchy, flavorful desert with yogurt , chocolate,cookies ,cherries and candied oranges.
Chocolate, yogurt and oranges doesn't sound right???
It tastes cool and tangy and chocolatey and heavenly.
The pictures rarely do justice to the taste.
Without much ado..
And these quantities serve two.
For the
Cookies and Chocolate layered Parfait...
You need
4 chocolate chip cookies
1 cup hung curd whey drained out at least 2 hours
50 gms dark chocolate
2 tbsp or more maple syrup or honey or sugar to sweeten
2 slices candied oranges
2-4 walnut halves or pecans or any soft nuts
Handful cherries
Divide the chocolate among two serving glasses and place over a double boiler to melt. Swirl the chocolate around to get a pretty design...
Chill till it sets again.
Mix the hung curd with the sweetener of your choice and set aside.
Chop the nuts, candied oranges and deseed the cherries.
Crush the cookies. Mix with the nuts and orange.
Now bring the glasses out of the fridge.
One generous spoonful of the sweetened curd. Now sprinkle the cookie mix over.
Layer the curd again and top with the cookie mix.
Stud the top with cherries and maybe a little.more chopped nuts.
Serve immediately and enjoy this quuck fix, ready in a jiffy, minimal preparation, cool ,cool ,cookie treat .
Every spoonful brings a different texture and flavor.
And saving the best for last...scrape the chocolate off the glass.
So your ingredients kept their integrity and all went and married well together.
An awesomely fresh and low calorie ,light summer dessert.
