Cookie #1- Chocolate Chocolate Decadence

So my job today was to create a cookie for a friend who suffers with a fruit intolerance. This really limits the ingredients I can use so I thought the best way to go was full on Chocolate Indulgence!
I made these using a basic recipe I had already created and adapted to make it a rich, dark and chewy delight  :)
I have used 3 lots of chocolate to make these cookies, Dutch Cocoa, White Chocolate and 53% Dark Chocolate. I chose not to go with the seriously dark chocolate as, although I love really dark chocolate I felt with the cocoa it would make these cookies just too much and the 53% Chocolate is the perfect compliment to the dark Dutch cocoa.
Cookie #1- Chocolate Chocolate Decadence 
I used the white chocolate to give an irregular accent on top of the cookies which made them really pop and also was just enough to cut through the richness of the cookie itself.
I used tempered dark chocolate as a coating to dip half the cookie in which looked lovely and gave some depth and variety to the cookie.
