This simple cake is very impressive. I just dust a bit of powdered sugar over the top. It is moist and light enough to eat anytime of the day.
I was looking for something chocolate like but not to heavy for a church function. There will be other food and I just wanted something to enjoy with coffee after dinner. This recipe is so simple and you probably have all the ingredients on hand.
If you don't have any brewed coffee sitting around you can use just water. I just love the taste of coffee and chocolate. I think it brings out the taste of the chocolate even more.
Christmas Cocoa Cake
Ingredients:
2 cups flour
3/4 cup cocoa powder
1 1/2 teaspoons baking soda
1/4 teaspoon salt
1 1/2 sticks salted butter at room temperature
1 3/4 cup brown sugar
2 large eggs
1 1/3 cups cold coffee
1 teaspoon vanilla
confectioners sugar for dusting
Directions:
Dust with powdered sugar.
