So, I know that all of you who know me, know that I love chocolate. So when I came across Roxana’s Home Baking site and her #chocolateparty a few months ago, I was all in. I love this months theme for #Chocolate party This month it is all about chocolate and caramel. Any recipe with these two ingredients will do. Thanks to our very gracious hostess Roxana’s Home Baking for coming up with this wonderful idea. You can’t go wrong with chocolate and caramel in my opinion. So this month when I was on the Facebook group for #chocolateparty, I noticed a lot of my blogger friends were leaning towards brownies. I decided to go a bit outside of the box and make cupcakes. Chocolate Cupcakes with Salted Caramel Frosting
Ingredients:
Chocolate Batter
3/4 cup unsweetened cocoa
1 3/4 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, softened
1 cup sugar
3 large eggs, at room temperature
1 teaspoon vanilla extract
1/2 cup sour cream
1 1/2 cups milk chocolate chips (1/2 cup or 1 cup is fine as well)
Salted Caramel Frosting
12 tablespoons unsalted butter a stick and a half
8 ounces of creme cheese
1 teaspoon vanilla
4 cups powdered sugar
1 cup caramel sauce
Directions:
Sift together cocoa, flour, baking powder and salt in a medium bowl; set aside. Beat butter and sugar at medium speed with an electric mixer until light and fluffy. Add eggs, 1 at a time, beating until well blended after each addition. Stir in vanilla
Add cocoa mixture to butter mixture alternately with sour cream, beginning and ending with cocoa mixture. Beat at low-speed until blended after each addition. Stir in chocolate chips. Put 12 paper baking cups in a muffin pan. Spoon batter evenly into cups, filling all the way to the top.
Bake at 350° for 25 to 30 minutes or until a wooden pick inserted in center comes out clean. Cool in pan 5 minutes. Then transfer to a wire rack, and cool 30 minutes or until completely cool. Spread cupcakes evenly with Salted Caramel frosting.
Salted Caramel Frosting
Beat Butter and cream cheese on high. Beat until combined add vanilla and slowly add the powdered sugar a cup at a time. Mix until light and fluffy. Add the caramel until you get the consistency you like.

3.) Your recipe must be published during the current month. Please do not link old recipes, they will be deleted.
